You can remove them, and it should be safe to do so as long as they haven't spread in gossip. The ffsdebugger (or BatBox) from MATY has an option to remove gossip memories.
 
A "realistic skin" can be anything from a skintone that looks more like real skin to one that's more or less ... anatomically correct. Generally speaking, a custom skintone, regardless of how realistic it is, would have to apply to all life stages so that Sims created with it would keep it throughout their lives. This does '''not''' necessarily mean that a more, er, "detailed" skintone would apply all the "details" to all life stages. It's going to depend on the specific skin.
