It seems like it is possible to make a family of 8, although with the 8th sim, you cannot use the premade sim option. However, this may be a possible effect of nraas (although I doubt it, given that they do not explicitly increase the sim limit), so this may not be true if you do not use nraas mods. Although I haven't pressed on, even after the 8th sim, it seems possible to add more sims/pets, but as mentioned before, trying to use premade sims will yield the "Maximum capacity" issue.
Hi! For your headshots you can download them to your Sims 3 account. When you create your Sims you have an option to save your Sim to the exchange and when you do, go to your account and at your studio you will find them there. Click on their picture to find a bigger one and save that image with right click and bam! you got your headshot! :) I hope that helps, ask me any more questions if you still need some help!
